Strawberry Balsamic Dressing

2/3 cup sliced strawberries
1/4 cup balsamic vinegar
1/2 shallot, chopped
2 tsp. fresh thyme leaves (1 tsp. dried thyme)
1 1/4 tsp. Dijon mustard
1/4 tsp. ground black pepper

Combine all ingredients and 1/4 cup water in a blender and
blend until very smooth.

Makes about 1 cup to serve 8.

NOTE: This flavorful fat-free salad dressing is great over
spinach and arugula, and it's also delicious as a dip for pear
or apple wedges or raw vegetables.
