Pickled Red Onions

1 red onion, finely chopped
Balsamic vinegar

Place the red onion in a ramekin, or other small container.
Pour balsamic vinegar over the onions until they are completely
covered. Cover and refrigerate.

Makes 4 servings.

NOTE: Use these onions as a topping for salads, sandwiches,
burgers, wraps, burritos, potatoes, etc.
