Loaded Chickpea Salad Sandwich

2 (15-oz.) cans chickpeas, rinsed and drained
2 (15-oz.) cans pinto beans, rinsed and drained
1-2 Tbsp. Our Hummus (click here)
1-2 Tbsp. Dijon mustard
2 Tbsp. lemon juice
1/4 tsp. garlic powder
1/4 tsp. paprika
1/2 tsp. Simply Organic All-Purpose Seasoning
1/4 tsp. black pepper
Ezekiel 4:9 Low Sodium Whole Grain Bread
Sandwich toppings:
          Spinach, lettuce, mixed greens
          Sliced tomatoes, cucumber
          Chopped onion, bell pepper
          Grated carrot

In a large bowl add the beans and mash with a potato masher
leaving it a bit chunky.

Add the remaining filling ingredients.

Mix well.

Use as a sandwich spread between bread with toppings of choice.

Makes 6 big sandwiches.
