Quick Mexican Rice and Beans
4 cups cooked brown rice
1/2 cup low sodium salsa
1 cup frozen organic corn, thawed
1 tsp. Simply Organic All-Purpose Seasoning
1 Tbsp. lime juice
1 tsp. smoked paprika
1 tsp. garlic powder
1 tsp. onion powder
1 tsp. red pepper flakes (optional)
1 (15-oz.) can pinto beans, rinsed and drained
1 (15-oz.) can black beans, rinsed and drained
Add all of the ingredients to a microwave safe dish. Stir to
combine. Heat in the microwave until warm -- about 3-4 minutes.
Serve warm with steamed greens or a salad on the side.
Makes 4 servings.
