Black Eyed Peas Salad with Baby Power Greens

For the salad:
1 (15-oz.) can black eyed peas, rinsed and drained
1 sweet bell pepper, diced
2 cups cherry tomatoes, halved (or quartered if they are bigger)
1/2 large cucumber, diced
1 cup frozen organic corn kernels, thawed
3/4 (16-oz.) bag fresh power greens (mix of baby kale,
          chard and spinach)
For the dressing:
1/4 cup apple cider vinegar
1/4 cup unsweetened applesauce
3 Tbsp. Date Paste  (see recipe)
1 Tbsp. Dijon mustard
2 garlic cloves, minced
1 tsp. smoked paprika
Dash or two of liquid smoke, optional
Simply Organic All-Purpose Seasoning/pepper to taste

Whisk all of the dressing ingredients together in a small bowl
and set aside.

Assemble all of the salad ingredients in a large bowl and mix

Pour the dressing over the salad and toss well when ready to
serve. Alternately, plate the salads and pass the dressing at
the table so everyone can take as little or as much as they

Makes 4 servings.

NOTE: This recipe is good for New Year's Day since the black
eyed peas and greens are said to bring good luck.
