10-Minute Mexican Rumba

2 (15-oz.) cans no-salt-added diced tomatoes
2 (15-oz.) cans no-salt-added black beans (or beans of choice)
2 lbs. frozen veggie mix
1/2 lb. frozen organic corn
Mexican spice mix:
          1 Tbsp. chili powder
          1 1/2 tsp. cumin
          1 tsp. smoked paprika  (or 1/2 tsp. paprika)
          1/4 tsp. cayenne pepper
          1 1/4 tsp. Simply Organic All-Purpose Seasoning
          1/4 tsp. coriander
For serving:
          Cooked brown rice or roasted potato chunks

Add all ingredients to a large pot and heat. The longer you
simmer, the stronger the spices. If you are in a hurry, just
bring to a boil and simmer for 10 minutes.

Spoon chili mix onto bowl of rice or potatoes. Add
cilantro/parsley for a fun garnish.
